Easy lemon cheesecake

James Thomson got on the Readers' Recipe bandwagon and sent this recipe for lemon cheesecake which he claims is so easy that his two year old son could make it! Like others who have sent us recipes, James says his cheesecake was a real hit with his friends at a dinner party.

Method
Crush the biscuits and combine with butter and honey. Place this mixture into a dish and press down evenly. Add the lemon juice and zest and the sugar to the mascarpone and mix. Spoon this on top of the biscuit base and refrigerate.

Tip: for that special occasion decorate with strawberries and sprigs of fresh mint.
